&lt;p&gt;&lt;SPAN style="FONT-SIZE: 14pt; FONT-FAMILY: Verdana"&gt;Tapar y cocer a fuego lento. Mientras, majar en el mortero por este orden el ajo con un poco de sal, las almendras y la miga de pan. Incorporar el aceite en un hilo fino y remover. Desleirlo con un poco del caldo de la cocci&#xF3;n de las patatas. &lt;o:p&gt;&lt;/o:p&gt;&lt;/SPAN&gt;&lt;/p&gt;

Se corta la carne en trozos peque&#xF1;os, se salpimenta y se pone a hervir con los cominos y las hierbas. A los 20 &#xF3; 25 minutos se echan tambi&#xE9;n las verduras con el l&#xED;quido de maceraci&#xF3;n, y se deja cocer todo junto otros 20 minutos m&#xE1;s, hasta que la carne est&#xE9; tierna. Se sirve decorando con los esp&#xE1;rragos hervidos, tiras de pimiento rojo asadas , o al gusto....&lt;/SPAN&gt;&lt;/SPAN&gt;&lt;/p&gt;

En un cazo a parte se ponen las otras doce cucharadas de az&#xFA;car, y se pone al fuego hasta conseguir el caramelo; a continuaci&#xF3;n se le agrega el merengue sin parar de mover, para que todo quede mezclado. Se introduce en el horno, a una altura media, y se deja unos ocho o diez minutos. Mientras, con las yemas, la leche y el resto del az&#xFA;car, se hacen unas natillas. Al sacar el can&#xF3;nigo del horno, se coloca en una fuente rodeado de las natillas, y se adorna con los bizcochos, con lo que queda listo para servir.&lt;/p&gt;

100 g. de miga de pan mojada en agua&lt;br /&gt;
vinagre&lt;br /&gt;
una tacita de aceite&lt;br /&gt;
sal&lt;/SPAN&gt;&lt;/p&gt;

Al d&#xED;a siguiente ponerlas a cocer con medio litro de agua y un poquito de sal hasta que est&#xE9;n tiernas.&lt;br /&gt;
Limpiar las acelgas, lavarlas y trocearlas aprovechando solo las hojas. Pelar los ajos, pelar y picar fino el tomate.&lt;br /&gt;
Calentar el aceite en una sart&#xE9;n, fre&#xED;r los ajos y las almendras sacarlos y reservarlos. En ese mismo aceite fre&#xED;r el chorizo y el tomate, dejar rehogar y a&#xF1;adir las acelgas. Continuar rehogando 5 minutos. Agregar el piment&#xF3;n, remover y verter todo esto en la olla donde est&#xE1;n las alubias. Machacar en el mortero los ajos, los cominos, las almendras y la miga de pan mojada. Verterlo en la olla.
